Who says vegan baking can’t be just as delicious as the classic versions? This vegan banana bread is so moist and flavorful that you won’t even miss the eggs or dairy. Whether you’re vegan or just looking to try something new, this recipe is a must-try. It’s easy to make and perfect for breakfast, a snack, or even dessert.

Ingredients:

  • 3 ripe bananas, peeled
  • 1/4 cup olive oil (can be substituted with sunflower oil)
  • 1 cup flour 
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/3 cup + 1 tablespoon brown sugar, cane sugar, or coconut sugar
  • Optional toppings: chocolate chips, peanut butter, berries, nuts

Instructions:

  1. Preheat your oven to 350°F. Grease a loaf pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, mash the ripe bananas until smooth. 
  3. Add the olive oil to the mashed bananas and mix well.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and sugar.
  5. Gradually add the dry ingredients to the banana mixture, stirring just until combined. 
  6. Fold in some chocolate chips, berries, or nuts into the batter (optional). 
  7. Pour the batter into the prepared loaf pan and bake for 40-50 minutes, and enjoy.
