If you found yourself with a bag full of cherry tomatoes, this quick recipe is just for you.

Cherry tomatoes are delicious, sweet, rich in vitamins, and very healthy. Eating tomatoes can even help fight against infections.

To make a jar full of excellent roasted tomatoes, here is what you will need to do.

Ingredients

A big amount of cherry tomatoes
A pinch of salt
2 fresh thyme branches
Olive oil

Instructions

Rinse the tomatoes well in cold water and dry with a towel. Place them on a baking sheet and drizzle over olive oil, salt, and thyme.

Bake the tomatoes on high temperature for 20 minutes or until the tomatoes are soft, bubbling, and slightly golden-browned.

Remove from the oven and chill the tomatoes in the pan until lukewarm. Pour all the contents of the pan (the tomatoes, the remaining olive oil, and the juices of the tomatoes) to a clean jar. Add olive oil until the roasted tomatoes are completely covered.

Keep the jar in the refrigerator for 24 hours before eating.

The roasted tomatoes will be best on top of a slice bread, with pasta, or in a salad.

Tomato season is at its late-summer peak, which means that it’s time to start thinking about how we can take advantage of the abundance of this juicy and ripe fruit in our recipes. While adding tomato to a salad or on top of a burger is something that we all know about, what are some other ways to use tomatoes to make a tasty treat? Here are three suggestions that you should try out!

Sun-Dried Tomatoes

Sun-dried tomatoes are a classic Mediterranean treat which results in a sweet and flavorful topping for salads and pizza alike. If you really love the flavor, you can eat them on your own as well! Don’t stress if you can’t use the sun to dry tomatoes where you live, as this can also be done in the oven.

Tomato Toast

Do you like having toast in the morning? If so, why not put the jams and jellies to the side and try out a savory tomato toast before you head out to work? Adding a couple of thick tomato slices along with olive oil and sea salt is a great way to put a spin on this classic breakfast item.

Fried Green Tomatoes

Fried green tomatoes are a Southern United States favorite that is made by taking an underripe “green” tomato, coating it in batter, and frying it in hot oil. Fried green tomatoes are one of our favorite side dishes and appetizer options of all time!
