Thai red curry is a great meal to make when you fancy some warmth and spiciness to keep you warm this winter. Here is a great recipe for a delicious Thai red curry.

Ingredients:

  • 2 tablespoons of red curry paste
  • 1 medium stalk of lemongrass
  • 1 inch of ginger
  • 4 cloves of garlic
  • 3 shallots
  • 1 teaspoon of ground coriander
  • 1 teaspoon of ground cumin
  • 1 teaspoon of smoked paprika
  • 1 tablespoon of cooking oil
  • 1 pound of chicken thighs
  • 1 tin of coconut milk
  • 1 cup of vegetable or chicken broth
  • 1 red pepper
  • 1 yellow pepper
  • 2 carrots
  • 2 tablespoons of soy sauce
  • 1 tablespoon of fish sauce
  • A teaspoon of sugar
  • Fresh coriander

Instructions:

  1. Combine your curry paste with your lemongrass, ginger, garlic, shallots, ground coriander, ground cumin, and paprika in a blender and blend until you achieve a smooth paste.
  2. Heat your oil in a large wok and add your freshly blended curry paste, cooking for 2 minutes and regularly stirring.
  3. Add your chicken to the wok and brown on each side.
  4. Pour in your coconut milk and chicken or vegetable broth and give it a good stir.
  5. Add your sliced peppers and carrots. At this point, stir in your soy and fish sauce and brown sugar. Allow the curry to simmer for at least 15 minutes.
  6. Taste for seasoning and add more salt or black pepper if needed. Serve with rice and garnish with fresh coriander.
