Fermented foods have been enjoyed for centuries across different cultures, offering a range of unique flavors and textures. From the tangy punch of sauerkraut to the umami richness of miso, fermented foods have something to satisfy every palate. If youโ€™re looking for more fermented food ideas, join us as we explore three distinct fermented delights.

Kimchi

Hailing from Korea, kimchi is a fiery fermented dish that has gained worldwide popularity. It is made by fermenting vegetables, typically cabbage, with a blend of spices, garlic, and chili peppers. The result is a harmonious combination of tanginess, spiciness, and umami.

Kombucha

Kombucha is created by fermenting sweetened tea with a symbiotic culture of bacteria and yeast (also known as SCOBY). The fermentation process yields a tangy, slightly sweet, and naturally carbonated beverage.

Tempeh

Originating from Indonesia, tempeh is a versatile fermented soybean product that has gained popularity as a meat alternative. It is made by fermenting cooked soybeans with a specific type of mold. The result is a firm, nutty, and protein-rich product that can be used in various dishes, from stir-fries to sandwiches. Tempeh not only adds a delicious earthy flavor to your meals but also provides essential nutrients like iron and calcium.

Tempeh is a great meat alternative and this Asian-inspired recipe is amazing!

Ingredients:

  • 1/4 cup of soy sauce
  • 1 tablespoon of gochujang or another type of chili paste
  • 1 tablespoon of rice wine vinegar
  • 1 tablespoon of lime juice
  • 2 teaspoons of sesame oil
  • 1-inch piece of ginger
  • 1 clove of garlic
  • 1 8 oz package of tempeh
  • 1 tablespoon of olive oil

Instructions:

  1. Start by mixing together the soy sauce, chili paste of your choice, vinegar, lime juice, and sesame oil in a bowl.
  2. Take a grater and grate the ginger and the garlic into the bowl with the other ingredients. Mix well.
  3. Then, cut the tempeh into wedges, cubes, planks, or any type of shape you like. If you cut them into planks or wedges, make sure to cut them in half so they’re thinner and fry better.
  4. Then, marinate the tempeh in the marinade in the fridge for at least 30 minutes or several hours.
  5. Heat up a pan over medium-high heat and then add in the olive oil.
  6. Drop in the pieces of tempeh, but not the marinade yet.
  7. After cooking on the first side for 5-7 minutes, flip them over, and pour over the marinade.
  8. Cook for another 5-7 minutes and serve with brown rice, quinoa, or anything else you like!

I had to share this evening's dinner with you. I was a little nervous about it – my first time making "facon". Now as most meat-eating people will agree, there's not much that can compete with good bacon ๐Ÿฅ“, however I was pretty keen to give this a go and convince my meat-loving husband this wasn't a bad alternative. Hence the nervousness. However I was pleasantly surprised – he ate it all, and apparently enjoyed it (or so he told me ๐Ÿ™„). In any case, I loved it, so tasty!!! ๐Ÿ˜‹ .. What's the meat alternative made from – well this one is made from tempeh – a fermented soy bean product. Tempeh is a great probiotic and we know that we are all in need of getting a good dose of fermented food to maintain a healthy gut. I love the texture and taste of tempeh, and it's so easy to cook! And plus mine had added sea vegetables (arame and hiziki) = added minerals and antioxidants + added taste ๐Ÿ‘Œ .. My recipe is inspired by @dr.vivian who cooks amazing facon – check her out if you haven't already. I've served my facon with sticky rice, some stir fried vegetables and a chilli bean sauce (another dose of fermented food)! .. Recipe 200g tempeh – sliced thinly 1/3 cup water 3 tablespoons tamari 1 teaspoon sesame oil 1/2 teaspoon smoked paprika 1/2 teaspoon chipotle chilli flakes 2 tablesooons cider vinegar 1 teaspoon maple syrup .. 1. Mix all the marinade ingredients together in a saucepan and bring to the boil. Boil for 1-2 minutes then pour over the tempeh. Leave to cool and marinade for minimum 2-3 hours. 2. When ready to eat, heat a non stick frying pan, spray with oil and place the tempeh in, marinade and all, and cook till nicely browning on both sides. Transfer to an air fryer or place under a grill until nice and crispy. Serve warm. Enjoy!

"You cannot get through a single day without having an impact on the world around you. What you do makes a difference, and you have to decide what kind of difference you want to make." โ€” Jane Goodall ๐ŸŒŽ . For those that know of Earth Day, it shouldnโ€™t be just one single day that we keep the Earth in our thoughts. Every action you make can leave a positive or negative mark on the world. I have chosen to do everything I can to minimize harm to the Earth. And while I am no where near perfect and still making mistakes along the way, I want to do my best to learn more and more about the things I can do to minimize the damage already done. ๐ŸŒผ . I made a choice almost 9 years ago to go vegan. Originally, that choice was specifically for health. As time has gone on, I realized what a powerful choice that was. Even past the ethical side, itโ€™s probably one of the least harmful to the environment around us. ๐ŸŒฑFood production, water, hunger, deforestation, ocean life, etc…its all heavily impacted by the choices on our plate. And while Iโ€™m not expecting everyone to go vegan, I hope that this is an encouragement for you to consider accepting more plants in your life, become informed about the environment and practices that impact the Earth, make more conscious decisions towards your health, learn more empathy towards yourself and others, and become active members of the solution. That can look like replacing meat with a serving of plant based protein options, being involved with the political scene and making sure that individuals making it into office care about our planet, choosing reusable containers, packing your own lunch…really almost anything. Remember that every small move absolutely counts. โ™ป . For dinner tonight decided on some sweet baked plantains, broccoli, baked tempeh, avocado, greens and zucchini. I made my tempeh by dicing 1/3 of a block of tempeh into cubes and tossing it together with 1/2 tbsp soy sauce, 1/2 tsp sriracha, 1 tsp nutritional yeast, 1 tsp maple syrup. ๐Ÿ‘Œ๐Ÿฝ
