Schnitzel is a classic dish popular in many parts of Europe, particularly in Austria and Germany. It’s simple, delicious, and filling. At its core, schnitzel consists of thin, tenderized meat coated in breadcrumbs and fried to golden perfection. Here’s a step-by-step guide to creating the perfect schnitzel at home. 

Ingredients:

  • 4 boneless meat cutlets (veal, chicken, or pork), about 1/4 inch thick
  • Salt and pepper, to taste
  • 2 large eggs
  • 1 cup all-purpose flour
  • 2 tablespoons milk
  • 2 cups breadcrumbs
  • Vegetable oil, for frying
  • Lemon wedges, for serving

Instructions:

  1. Start by tenderizing the meat cutlets to about 1/4 inch thickness using a meat mallet. Season both sides of each cutlet with salt and pepper.
  2. Find three shallow dishes. In the first dish, place the flour. Beat the eggs and milk in the second dish, and in the third dish, spread out the breadcrumbs.
  3. Dredge each cutlet first in flour, shaking off any excess. Dip it into the egg mixture, ensuring it’s fully coated. Finally, coat it well with breadcrumbs. 
  4. Heat a generous amount of oil in a large frying pan over medium-high heat. Fry the schnitzels in batches for about 3-4 minutes on each side.
  5. Serve hot, garnished with lemon wedges.
