Red cabbage really has more of a purple hue, and works great steamed, sauteed, pickled, or raw! Anyway you like it you can enjoy a heaping portion of vitamins A and C.

Orange

If you want to add a dash of sunshine to your plate, look at sweet potatoes! Not only are they jam-packed with vitamin A they have almost no calories and can be treated as you would a starch! Mash them, roast them, even make them into fries.

Green

You have the most options with green, so go for anything from leafy greens to broccoli to zucchini. If you are vegetarian though you should stick to anything that is dark green because that means it will give you iron and calcium.

Yellow

Yellow squash is perfect roasted off for a bit in the oven and will take any spice you give it. And in return, it will give you potassium and no calories!
