Over the past few years, poke bowls have been super popular—and they’re a great way to get lots of protein and eat vegetables. They originated in the Hawaiian Islands, and they’re now available everywhere from food courts to fancy restaurants. Poke bowls are made with fresh-caught fish and seafood, vegetables, and a starch. They’re super easy to make, and here’s your step-by-step guide for assembling one at home.

Step 1: Make the Poke

There are tons of different fish you can use for the poke, and the most popular ones are salmon, tuna, and octopus. Whichever fish/seafood you choose will be delicious. Cut the sushi-grade fish into 1/4 inch cubes and place it into a bowl. Add enough chopped onions, soy sauce, and sesame oil to coat the fish. Then add spices like crushed red pepper, Siracha sauce, or wasabi paste. Stir everything together and refrigerate it until you’re ready to serve.

Step 2: Choose a Starch

Cooked sushi rice is the most common starch to use, but you can also use cauliflower rice if you want a low-carb or gluten-free dish. Place the starch into individual serving bowls.

Step 3: Add the Poke

Add a generous scoop of the poke next to the starch.

Step 4: Add Something Preserved

Kimchi or pickled vegetables add a nice taste, and they’re a common element of poke bowls.

Step 5: Add Something Crunchy and Cold

Crunchy vegetables like red onions, carrots, cucumbers, bean sprouts, and sliced radishes are an essential part of poke bowls.

Step 6: Add Something Soft

The last step happens to be our favorite part of the poke bowls. Top the bowls with something creamy like avocado, mango, or papaya.
