Ingredients:

  • 1 cup of all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs, at room temperature
  • 1/2 cup of granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest (optional)
  • 1/2 cup of unsalted butter, melted and cooled
  • Powdered sugar, for dusting
  • Butter and flour, for greasing the madeleine pan

Instructions:

  1. Preheat your oven to 375°F (190°C). Generously butter and flour a madeleine pan, ensuring all the grooves are well-coated. Tap out any excess flour.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside. In a large mixing bowl, beat the eggs and granulated sugar together using an electric mixer on high speed until the mixture is pale, thick, and fluffy, about 5 minutes. This step is crucial for creating the light texture of the madeleines.
  3. Gently fold in the vanilla extract and lemon zest, if using. Sift the flour mixture over the egg mixture in thirds, gently folding it in after each addition. Be careful not to deflate the batter.
  4. Slowly pour the melted and cooled butter around the edge of the batter. Gently fold in the butter until fully incorporated. The batter should be smooth and shiny.
