Add oatmeal to the mix, and you have a hearty, delicious treat that doesn’t even require baking. No-bake oatmeal chocolate peanut butter cookies are perfect for those moments when you need a quick sweet fix without the hassle of preheating the oven. 

Ingredients:

  • 1 1/2 cups granulated sugar
  • 1/2 cup milk
  • 1/2 cup unsalted butter
  • 1/4 cup unsweetened cocoa powder
  • 3 cups quick-cooking oats
  • 1 cup smooth peanut butter
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. In a medium saucepan, combine the sugar, milk, butter, and cocoa powder. Bring the mixture to a boil over medium heat, stirring consistently to prevent burning. Allow it to boil for about one minute, then remove from heat.
  2. Add the peanut butter, vanilla extract, and a pinch of salt to the saucepan, stirring until the peanut butter melts completely and the mixture is well combined. Gradually mix in the oats.
  3. Line a baking sheet with wax paper. Drop spoonfuls of the cookie mixture onto the wax paper. Flatten them slightly with the back of the spoon if you prefer a thinner cookie.
  4. Allow the cookies to cool at room temperature until they are set, about 30 minutes.
