As you prepare to treat your family and friends to a New Year’s day lunch, you’ll surely want to kick off the new year on the right foot. And what better way to do so than with some scrumptious food? Here’s how you can create antipasto skewers as a delicious appetizer to get the party started.

Ingredients:

  • 4 ounces sliced salami
  • 8 ounces mozzarella balls
  • 14 ounces artichoke hearts
  • 1/4 lb green olives
  • bunch of fresh basil
  • 1/4 lb roasted red peppers
  • 9 oz. fresh cheese tortellini
  • 1/2 cup extra virgin olive oil
  • Salt
  • Ground black pepper
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes
  • Pack of skewers

Instructions

  1. Boil a large pot of water, adding a tablespoon of extra virgin olive oil. Throw the pack of tortellini cheese into the pot, cooking according to the package’s instructions. Remove once cooked to al dente.
  2. Season the cheese with salt and pepper before adding balsamic vinegar and a 1/4 cup of olive oil. Continue to mix until blended.
  3. Set the tortellini aside and take out the mozzarella balls. Throw the mozzarella into a small bowl, pouring the remainder of the olive oil and sprinkling Italian seasoning and red pepper flakes. Mix well.
  4. Finally, take out the skewers. On each one, layer a mozzarella ball, basil, salami, roasted red pepper, artichoke heart, green olives, and tortellini.

No turkey dinner or roast is complete without some delicious savory sauces on the side, in fact, for many people the gravy, cranberry sauce, and bread sauce are the best parts of the meal. Store-bought is always an option, but these recipes are quick and simple and will see you putting homemade sauces on the table in no time.

Vegetarian Gravy

Ingredients (to serve 4):

  • 1 onion
  • 1 leek
  • 1 vegetarian stock cube
  • 1/4 cup of red wine
  • 1 cup of water
  • 2 tablespoons of oil
  • 1 tablespoon of butter
  • Salt and pepper

Instructions:

  1. Finely slice the onion and the leek.
  2. Heat the oil in the pan, once it’s hot add the flour and fry for 2 minutes.
  3. Add the sliced vegetables to the pan, and fry for 10 minutes.
  4. Add the red wine, and let it simmer for 2 minutes.
  5. Add the stock cube, water, and salt and pepper to taste. Simmer for another 10 minutes. Strain before serving, if you wish.

Cranberry Sauce

Ingredients (to serve 4):

  • 1 cup of fresh cranberries
  • 1 cup of water
  • 1/3 cup of sugar
  • 2 oranges

Instructions:

  1. Place the cranberries, sugar, and water in a pan and bring to a simmer.
  2. Juice the oranges and zest one of them.
  3. Add the orange juice and zest to the pan, and cook for 15 minutes.

Bread Sauce

Ingredients (to serve 4):

  • 2 cups of breadcrumbs
  • 1 1/2 cup of milk
  • 3 bay leaves
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 1/2 teaspoon of nutmeg
  • 3 tablespoons of unsalted butter

Instructions:

  1. Heat the butter in a pan.
  2. Once the butter has melted, add the breadcrumbs, milk, and bay leaves. Simmer for 10 minutes.
  3. Reduce the heat and add the salt, pepper and nutmeg. Stir through well, cook for another 5 minutes on a low heat.
