Why Adding Mayo to Muffins is a Good Idea

It’s really simple. Mixing in one tablespoon of mayo into your wet ingredients will significantly improve your muffins. The mayonnaise will make the muffins moist when they come out of the oven, and they will improve their texture. This little trick is already used by professional chefs with all sorts of baked goods, including chocolate cakes, so there is nothing that should stop you from trying it.

Now, you understandably might fear that mayo will affect the way muffins taste. But that won’t happen because the quantity you introduce is not enough to overpower other flavors.

Due to its ingredients, mayonnaise can also come in handy if you are out of some muffin ingredients. For example, if you are out of eggs, just add three tablespoons of mayonnaise to the wet ingredients for every egg you plan to use. It will work as a charm.

Muffins are often hit or miss for most people. Sometimes, they are perfectly shaped and just the right amount of moist, while other times, they fall apart or turn out dried out. If you would like to have more good muffins in your life than bad ones, then you should follow the tips from television personality and cookbook author Ina Garten.

On top of her cookbooks and cooking and food-relate shows, Garten often shares some of her recipes and cooking wisdom with followers on social media. She recently posted a video on Instagram in which she tried out a new recipe for blueberry muffins and used the opportunity to share some baking tips for muffins.

According to Garten, she always greases the top of the muffin tin so the muffins don’t get stuck. Also, she uses an ice cream scoop to distribute the muffin batter, as this leads to “uniform muffins.”

If you want your muffins to have a crunchy top, Garten recommends sprinkling them with sugar before baking. Finally, she also keeps a thermometer in the oven to ensure that her muffins are baked at the perfect temperature.
