If you’re a vegetarian, then attending a barbeque can be a lonely place. Fortunately, it doesn’t have to be. Here are some scrumptious and filling carrot hot dogs you can make that will allow you to partake while satisfying your cravings.

Ingredients:

  • 1/4 cup vegetable broth
  • 1/4 cup apple cider vinegar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon liquid smoke
  • 1 teaspoon maple syrup
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 8 medium carrots
  • 8 hot dog buns
  • ketchup
  • mustard

Instructions:

  1. Pour olive oil into a roasting pan and throw in the carrots. In a small bowl, whisk together the broth, garlic powder, liquid smoke, maple syrup, paprika, soy sauce, and vinegar. Pour the mixture over the carrots and allow to sit for 30 minutes.
  2. Preheat your oven to 425°F. Roast the carrots for 30 minutes in a foil-covered baking dish. Then, remove the foil and bake the carrots for another 20 minutes. Once the carrots are tender enough to stick a fork through, they are ready.
