Halloumi burgers are becoming increasingly popular. Not only are they delicious in their own right—they are are wonderful vegetarian alternative to a beef burger.

Here’s how to perfect the art of creating the perfect halloumi burger.

Prepare Filling

Chop up some red onion into long strips—or so that it falls into its circular layers. Slice a tomato lengthways with cucumber and lettuce. Mix in extra virgin olive oil.

Cook Halloumi

Buy a slab of supermarket halloumi and fire up the barbeque or heat a pan with olive oil. Cut the halloumi into thick slices. If the slices are too thin, they will burn and lose that beautiful flavor. You want the outside to be crispy and flavorful, while the inside is moist and rubbery.

Toast Bun

Once the halloumi has been nicely cooked, it’s time to toast your bun. Take a brioche bun and cut it in half. Then, place both halves onto the barbeque or under the grill. You want both sides to be nicely toasted. Ideally, the top of the brioche bun will have a little chargrilled mark.

Sweet Chilli Halloumi Burger 🌶⠀ ⠀ Halloumi itself is amazing. But in a brioche burger bun with sweet chilli sauce and salad, it’s even better! ⠀ ⠀ VEGETARIAN ☑⠀ ⠀ TIME IT TAKES ⏰: 15 MINS⠀ ⠀ INGREDIENTS: ⠀ This can be improvised depending on preference. I put in: ⠀ * 1/4-1/3 pack of Halloumi. Sliced from the side of the block and across to get one big square/rectangle. * 2 slices Tomato ⠀ * Few slices of Red Onion ⠀ * 2 leaves of Gem Lettuce⠀ * Spoonful of homemade coleslaw which was made for a BBQ. (This is raw grated carrot, shredded raw cabbage and mayo) ⠀ * Sweet Chilli Sauce ⠀ * Allioli⠀ ⠀ METHOD: ⠀ * Prepare the salad first. I sliced the tomato and red onion and shredded the lettuce after washing. Slice the halloumi from the side and across to get one large square/ rectangle piece. You can get 3 or 4 of these slices out of a standard block. ⠀ * Heat a drizzle of olive oil in a frying pan. When sizzling add the large piece of halloumi. Flip it regularly to see how it’s cooking on both sides. It’s cooked when it’s golden brown on both sides.⠀ * Cut the brioche burger buns in half and lightly toast underneath the grill as the halloumi is cooking. * Serve the burger with a spread of allioli on the bottom bun and sweet chilli sauce on the top bun. Add the salad, coleslaw etc, place the cooked halloumi on top and then add the top bun. ⠀ ⠀ Enjoy!

Assemble

Put some salsa on the bottom of the bun before putting in the halloumi, the red onion, the lettuce, the cucumber. Top with some sweet chili sauce and a little dollop of hummus.
