Zucchini contains more than 90% water and most of its nutrients are packed in their skin. The same goes for eggplant, so you should really consider eating them as they are.

Potatoes

Potato skin is much more nutritious than the interior of the potato. It’s packed with vitamins, minerals, and fiber—and that’s why you shouldn’t peel your potatoes off before cooking them and thoroughly wash them instead.

Just like potatoes, raw beets can be eaten with their skin on, as long as you give them a good scrub before adding them to your salads and other dishes.

Hummus is a delicious Middle Eastern dip that combines chickpeas, tahini, olive oil, and lemon juice to make a delicious creation that can be used to eat alone, as a dip for vegetables, and in all kinds of other ways.

We love sandwiches that incorporate hummus into them, which is why we want to share this delicious recipe for a cucumber hummus sandwich with you. It’s vegan, super filling, and very healthy. Let’s learn how to make it!

Ingredients

  • 1 piece pita bread
  • ½ cucumber, sliced
  • ⅓ cup hummus
  • Paprika

Instructions

Start off by placing the pita bread in a toaster and heating it until it becomes soft and the outside is slightly crip. After you’ve done this, use a knife to open up the bread so that it forms a “pocket.”

Next, slice half of a cucumber and place it on the inside of the pita bread. After this, you’ll want to spread a 1/3  cup of fresh hummus into the pita bread so that it is evenly spread out.

Finally, sprinkle a bit of paprika into the sandwich to taste, and that’s all. Your cucumber hummus sandwich is ready to be enjoyed!

Ingredients

  • 2 ripe tomatoes, medium-sized
  • 1 large cucumber
  • 1 small red onion
  • 2 tablespoons olive oil
  • ¼ cup red wine vinegar
  • 2 teaspoons salt
  • 2 teaspoons black pepper

Instructions

  • The first thing you’ll want to do is cut the tomatoes and cucumber into small, bite-sized pieces. Once you’re done with this step, place them into a large bowl.
  • Next, go ahead and slice the red onion into thin, almost transparent slices and add to the bowl along with the tomatoes and cucumber.
  • Sprinkle salt and black pepper on the ingredients, and then add the olive oil and red wine vinegar. Stir thoroughly, ensuring that the secondary ingredients blend together to make a sort of vinaigrette.
