I like making sheet cakes because I cannot decorate a cake to save my life! It’s also worth mentioning that carrot cake is my favorite cake EVER. ? CAKE INGREDIENTS: -4 eggs -1 cup white sugar -1/2 cup brown sugar -1 cup vegetable oil -2 cups flour -2 tsp baking soda -1/2 tsp all spice -2 tsp cinnamon -1/4 tsp salt -1/4 tsp baking powder -2 cups carrots, finely grated -1/2 cup chopped walnuts FROSTING INGREDIENTS: -8 oz cream cheese, softened -1/2 cup butter -2 cups powdered sugar -2 tsp vanilla extract -more chopped walnuts for topping, optional DIRECTIONS: ?Preheat oven to 350 degrees. Grease 13×9 inch square pan + add layer of parchment paper. Spray the parchment paper with non-fat cooking spray. While the oven is preheating, sift together the flour, cinnamon, all spice, baking powder, baking soda, + salt. ?Cream together the eggs, sugars, + vegetable oil. Slowly add the dry mixture to the wet ingredients. After the ingredients have all been incorporated, fold in the grated carrots + chopped walnuts. ?Pour the cake batter into the pan + bake for 25-30 minutes, until the toothpick comes out clean. Remove the cake from the pan + allow to cool completely. After the cake has cooled for close to an hour, make your frosting. Start by mixing together the cream cheese, vanilla extract, + butter, then gradually add in the powdered sugar. This will avoid making a gigantic mess in your kitchen! Frost the cake + add more chopped walnuts if desired. ?Slice the cake into however many squares you’d like. I cut mine into 15, + each slice was pretty thick + a good size.
